CLEAN & CLEAR VEGETABLE SOUP
One of my strongest intentions for the first few months of 2024 is to get really CLEAR in my body. There's so many different layers that go into that, but what I'm putting into my body is a really big part of it. I've been keeping things light + clean, but so nourishing & tasteful.
I've been making this vegetable soup 1x week for the last 3 weeks and it's been one of the best things for my body. I've usually been having it for lunch paired with a small side salad, but it's just as good at dinner.
It's WILD what can happen in your mind, body, life when you really deeply clean + clear your body. Excited to talk more about this & share some of the shifts that you can easily make in your day to day to achieve these results.

Ingredients:
½ medium-large onion, chopped
2 large carrots, peeled & chopped
2 large celery sticks, chopped
3 large cloves garlic, chopped or minced
1 large zucchini, chopped (you can also use green beans, asparagus, broccoli or any green veggie or your choice)
3-4 medium potatoes, chopped (I enjoy a mix of yellow potatoes + sweet potatoes)
1 can diced tomatoes (28oz can)
filtered water
salt + pepper
olive oil
optional: ½-1 can chickpeas (drained)
optional: vegetable broth (if using, I'd recommend Plant Strong, which is sold online or at Whole Foods)
optional: handful of fresh dill
Directions:
In a large pot over medium high heat, add 1 tbsp olive oil (or you can just add a bit of water) and let it warm for a minute.
Add chopped onions, carrots, celery and garlic. Add a sprinkle of salt + pepper. Begin to mix and let it cook for about 5 min until veggies are softened.
Add zucchini, potatoes, and diced tomatoes. Mix until everything is combined.
Add filtered water (option to add vegetable broth here) until it's covering all of the veggies (add enough so there's enough broth when the time comes to eat).
Let the pot come to a boil. Once it's boiling, lower to a simmer (option to add your chickpeas & fresh dill here). Cover with the lid & let it cook for about 45-60 min, stirring occasionally.
Option to add salt/pepper as you continue to taste.
Serve when ready & enjoy!
